Fried Aubergine

Fried Aubergine:


Ingredients:

  • 3 pcs Aubergine
  • 100 g Flour
  • 2 pcs Eggs
  • 100 g Breadcrumbs
  • 1l Oil

Method:


Pierce the aubergines using a knife.Bake them on 250 degrees Celsius for around 20-30 minutes.Put them in a mixing bowl and cover with cling film for 5-10 minutes.Take off the cling film, let it cool down a little then peel the skin and flatten the aubergines using your hands. Slightly season them with salt.Coat them with flour, eggs and breadcrumbs.Fry them in hot oil until they become golden brown.Season with salt and pepper.
