Pumpkin Soup with Coconut Milk

Pumpkin Soup with Coconut Milk:
Ingredients:
- 1000 g Pumpkin (peeled, diced)
- 200 g Leek
- 500 g Vegetable stock
- 400 g Coconut Milk
- 30 g Ginger
- Salt
Preparation:
Peel the pumpkin and ginger and cut them into small pieces. Slice the leek. Then slightly fry them in oil. Pour the stock and coconut milk on top and cook it until the pumpkin becomes soft. Blend it well and sieve if necessary. Season with salt.
