Gulyás Soup

Gulyás Soup:

Ingredients:

  • 1,2 kg Diced Beef
  • 600 g Onion
  • 115 g Parsley Root
  • 250 g Carrot
  • 500 g Potato
  • 3 db Tomato
  • 1-2 db Yellow Pepper
  • 5-8 cloves of Garlic
  • Ground Caraway
  • Smoked Sweet Paprika Powder

Method:

Dice the beef into cubes and sear them until browned, then set aside.

Finely chop the onion and sauté it in fat or oil (you can use the same pot in which the meat was seared). When the onion turns translucent, add the diced tomatoes and Hungarian wax peppers. Season with salt and let them release their juices. Once they have softened and released liquid, add the finely chopped or grated garlic. Pour in just enough water to cover the mixture and continue cooking. When the liquid reduces for the first time, add the paprika powder. Continue cooking the base until it breaks down almost completely, adding water as needed. Once the base has cooked down, return the seared beef to the pot and simmer until nearly tender. When the meat is almost done, add the diced potatoes, sliced carrots, and parsnips. Cook until both the vegetables and the meat are fully tender. Season to taste with ground cumin, salt and black pepper.
