Gluten Free Cheesecake

Gluten Free Biscuit Base:
(For a cake ring with d 16 cm)
Ingredients:
- 100g Schär Gluten Free Biscuit (Maria)
- 75 g Butter
- 15 g Honey
- Cinnamon, Orange Zest, Cardamon
- Pinch of Salt
Method:
Grind the biscuit and mix it with cinnamon, orange zest, cardamon and a pinch of salt. Melt the butter and mix with honey then add it to the ground biscuit. Mix it well. Put it into the cake ring which is covered with baking paper and smooth it ut with a spoon or a glass. Put it into the fridge until you make the cheesecake base.
Cheesecake:
(For a cake ring with d 16 cm)
Ingredients:
- 600 g Philadelphia
- 150 g Sugar
- 3 pc Egg
- 130 g Cream
- 40 g Corn Starch
- Vanilla, Lime and Lemon zest
Method:
Mix the philadelphia with the sugar, vanilla ,lime and lemon zest. Mix the cream, eggs and corn starch with hand blender. Add it to the cheese mixture and mix it until becomes smooth. Pour it on the biscuit base and bake it on 145 Celsius for around 55-70 minutes.
Let it cool down before finishing up with whipped cream and fresh berries.
