Gluten Free Linzer Cookies:
Ingredients:
- 200 g Rice Flour
- 75 g Almond Flour or Other Ground Nuts
- 150 g Butter or Margarin
- 100 g Icing Sugar
- 30 g Egg Yolk
- Salt
Method:
Crumble the cold butter with the rice flour and almond flour . Add the icing sugar and egg yolk then start to knead it with your hands. Move fast, and be careful not to work too much with the dough because the butter shouldn't melt. When the dough becomes homogeneous roll it out 3-4 mm thickness between two baking paper and leave it to rest in the fridge for 1 hours. Cut it with a circle-shaped cutter, then put the disks on a baking paper covered baking sheet and let it rest in a colder place for 15-20 minutes. Preheat the oven to 175 C° and bake the dough for 8-10 minutes. Let it completely cool down. Fill two disks with the jam or marmalade which you'd like to use and repeat until all the dough is used. You can use any other nuts as well.
