Brassói Aprópecsenye:
Ingredients:
- 2 kg Potato
- Parsley
- 1,4 kg Pork Tenderloin
- 1 pc Onion
- 4 clove of Garlic
- Marjoram
- Salt
- 100 g Lard/ Bacon
Method:
Dice the bacon and render the fat by frying it until crispy. Add the finely chopped onion and continue frying until it becomes translucent. Cut the meat into cubes and add it to the onions, searing it until golden brown. Grate the garlic in and season with marjoram and salt. Stir everything well, then pour in enough water to cover the ingredients. Let the stew simmer over low heat until the meat becomes tender.
Meanwhile, peel the potatoes, cut them into medium-sized cubes, and deep-fry them in hot oil until golden brown. Once fried, season with salt and sprinkle with finely chopped parsley before serving.
